The Story
Java Black Honey comes from Wanoja Farms in the Kamojang highlands of West Java. The same farm, the same harvest window, processed three different ways across this collection.
This lot was black honey at origin. Elevation and variety details [TO CONFIRM] until verified with the producer.
What sets this coffee apart is not a single attribute. It is what the process does to a familiar terroir.
This process explained.
Sweet, rounded, layered. Most of the mucilage is left on the bean during drying, adding body and brown-sugar character without full fruit dominance.
How we brew it.

15g : 250g
94°C. Slow pour. Clean, balanced extraction that lets the process speak.
Espresso
18g : 36g
28–32 seconds. Tight, sweet, structured.
Cappuccino
18g : 36g + 120g milk
Soft sweetness against silk-textured milk.
